Penny’s Pasta Primavera

Ready in just 30 minutes, it’s an easy yet satisfying dish that welcomes creative customization—swap in seasonal veggies while keeping the zucchini and mushrooms for their perfect flavor-absorbing qualities. Each bite combines a light olive oil sauce with aromatic basil, oregano, and a touch of red pepper heat, making this dish as inviting as it is adaptable. Ingredients:

  • ¼ cup extra virgin olive oil
  • 1 small to medium red onion, chopped
  • 1 Knorr vegetable bouillon cube (or chicken, if preferred)
  • ¼ cup water (plus more if needed)
  • 1 medium green zucchini, sliced and halved
  • 1 medium yellow zucchini, sliced and halved
  • 1 cup baby Bella mushrooms, sliced
  • 2-3 tbsp fresh parsley, chopped
  • 1 tsp dried basil (more to taste)
  • 1 tsp dried oregano (more to taste)
  • 2 dashes garlic powder (more to taste)
  • Red pepper flakes, to taste
  • Salt, to taste (optional)
  • ½ to 1 lb pasta (depending on preference)
  • Freshly grated Parmesan, for serving

Instructions:

  1. Prepare the Vegetables: In a deep, heavy-bottomed pan, heat the olive oil over medium-low heat. Add the onion and bouillon cube, cooking until the onion softens (but doesn’t become mushy), about 3-5 minutes.
  2. Add Vegetables and Herbs: Pour in the water and add the green and yellow zucchini, mushrooms, and parsley. Cook for 5-7 minutes, then add the basil, oregano, and garlic powder. Let the mixture cook for another 5 minutes, stirring occasionally. If the sauce becomes too dry, reduce the heat, add another ¼ cup of water, a dash of oil, and half of a bouillon cube.
  3. Season to Taste: Stir in the red pepper flakes and salt, if needed (the bouillon already provides some saltiness). Continue cooking on low heat until the vegetables are tender. Once done, turn off the heat and cover the pan until ready to serve.
  4. Cook the Pasta: While the sauce is simmering, cook the pasta according to package instructions. Any pasta shape works well; medium-width spaghetti is a personal favorite.
  5. Serve: Plate the pasta, spoon the vegetable sauce on top, and sprinkle with freshly grated Parmesan cheese if desired. Serve immediately and enjoy!
