This recipe has been in my family for 4 generations (that I know of).


Chocolate Coconut Macaroons
This recipe may be simple in terms of ingredients, but I can't emphasize enough how important it is to work quickly and stir constantly. Both the sweetened condensed milk and chocolate are delicate, so follow my instructions carefully, and you'll be rewarded with perfect chocolate coconut bliss!

Equipment
- 1 double boiler (must have at least 2 /1/2 quarts capacity)
- 1 cookie sheet ( 2 cookie sheets are best, but you only need 1)
- parchment paper (not required; just makes clean up easier because macaroons don't stick)
Ingredients
- 2 14 oz cans of sweetened condensed milk
- 8 1 oz unsweetened chocolate
- 1 tsp vanilla (can let it overflow the spoon)
- 1 14 oz sweetened coconut flakes
Instructions
- Preheat the oven to 350° F. Grease cookie sheet (s).
- Fill sauce pan 1/4 full or as full as possible without touching the double boiler pot. (to boil the water you can remove the double boiler and cover). Set stove to High until water starts to boil.
- Remove cover and place double boiler on top of the saucepan. Using a small baking spatula, pour the sweetened condensed milk into the double boiler. Stir constantly until hot (2-4 minutes). Then stirring constantly, add the vanilla and the chocolate until well blended (it will look like chocolate pudding).
- Turn off heat. Add the coconut. Using a spatulastir/fold into the chocolate mixture in the double boiler until all the white coconut is covered in chocolate.
- Spoon the chocolate coconut mixture (using a tablespoon/teaspoon depending on the size of your flatware) Please see picturebelow.
- Bake for 10-12 minutes or until you see the coconut ends, which stick out, are browned slightly.
- Let cool for 10-12 minutes before serving.Enjoy!
Notes
- The above is a double recipe. This is because until recently, when things became just my husband and me, 1 batch of Chocolate Coconut Macaroons was simply not enough:)
- You can freeze the macaroons. As long as you seal them in a freezer container of some type, they should last for up to 1 year. Honestly though I can’t be 100% sure because mine never last that long:)
